I have no idea why I thought this was so hard to make or why I thought it was super unhealthy. Maybe it's because I consider this dish a "comfort food" and when I think of comfort foods, I think of butter. Who knows?
Anyway, I thought I would go ahead and give this a try and I'm so glad I did! I actually prepped everything in advance and threw it in the oven to cook about 30 minutes before I knew the kids would be ready for dinner. This makes 4 adult servings if you follow the Fix program and the container count would be 1 blue, 1 red, 1 green, 1 yellow, 1 tsp. and about 1/4 purple. I served this with a spinach salad topped with my favorite dressing which can be found here.
On a side note, use any veggies you and your family like or instead of baking potatoes, try sweet potatoes.
